Pineberry and Strawberry Cream Pie
- 1 cup strawberries, hulled and halved, plus 3 whole strawberries
- 8 oz cream cheese, softened
- ⅓ cup sugar
- 1 tsp vanilla
- 10 oz pineberries, hulled and halved
- ½ cup whipping cream
- 9-inch premade graham cracker crust
Place a medium mixing bowl in the freezer for 15 minutes.
In the bowl of a food processor, blend halved strawberries, cream cheese, sugar and vanilla until smooth.
In the chilled bowl, whip the cream until stiff peaks form, about 1 minute. Gently fold the cream cheese mixture into the whipped cream until well combined. Pour the pie filling into the graham cracker crust.
Place the pineberries on top of the pie in a circular design, ending with 3 whole strawberries in the center. Refrigerate the pie for 3 hours, or until firm. Makes 8 servings.
