Baked Cod with Cheddar Herb Crust
- Nonstick cooking spray
- ½ lb fresh white bread, crusts removed
- ½ lb sharp white cheddar cheese, grated
- 4 Tbsp butter, melted
- ½ tsp garlic powder
- ¼ cup fresh parsley, finely chopped
- 1½ to 2 lbs fresh cod fillet, cut into 4 equal portions
- 2 Tbsp mayonnaise
Preheat oven to 375 F. Coat a sheet pan with nonstick cooking spray.
Process/blend crustless bread into crumbs. Add cheese, butter, garlic and pulse to combine. Transfer to a separate bowl, add the chopped parsley and mix thoroughly.
Pat the cod portions dry to remove any excess moisture. Spread the mayonnaise evenly over the top of the cod portions. Lightly press the crumb mixture onto the cod to cover the top completely. Place the breaded cod portions on the prepared pan. Bake 20 minutes, or until fish is cooked through, flaky and firm. Makes 4 servings.
