Baked Apple and Pecan Oatmeal


  • Butter, for greasing
  • 3 cups rolled oats
  • ⅓ cup brown sugar, packed
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1½ cups milk
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla
  • 1 Stemilt Artisan Organic apple, cored, peeled and chopped
  • ¼ cup pecans, chopped

Preheat the oven to 350 F. Grease an 8 x 8-inch baking pan with butter.

In a medium bowl, combine the oats, sugar, baking powder, cinnamon and salt (the dry ingredients). In a separate bowl, combine the milk, eggs, melted butter and vanilla (the wet ingredients). Mix the wet and dry ingredients together. Stir in the chopped apple and pecans. Pour the mixture into the baking pan; bake 30 minutes. Remove from the oven and serve warm. Makes 9 servings.
