Mandarin Chicken Salad

Sunkist® Mandarin Chicken Salad


DRESSING

  • ¼ cup rice wine vinegar
  • 1 Tbsp sesame oil
  • 2 Tbsp low-sodium soy sauce or coconut aminos
  • 2 Tbsp olive oil
  • 1 tsp freshly grated ginger
  • 1 garlic clove, minced
  • Salt and pepper, to taste

SALAD

  • 2 cups napa cabbage, cored and thinly sliced
  • 1 cup purple cabbage, cored and thinly sliced
  • 1 cup carrots, shredded
  • 2 green onions, thinly sliced
  • 1 avocado, pitted, peeled and sliced
  • 1 cup rotisserie chicken, shredded
  • 4 Sunkist® mandarins, peeled and segmented
  • 2 Tbsp cilantro, chopped
  • ¼ cup slivered or sliced almonds
  • Sesame seeds, for garnish (optional)

Prepare the dressing: In a small bowl, whisk together the dressing ingredients.

Prepare the salad: Combine cabbage, carrots, green onions, avocado and chicken in a large bowl. Toss well to combine, then add the mandarins, cilantro and almonds.

Pour the dressing over the salad just before serving, and sprinkle with sesame seeds. Makes 2 to 3 servings.
