Arroz con Leche
- 1 cup uncooked short-grain brown rice
- 2 cups water
- 1¾ cups unsweetened almond milk
- 1 Tbsp pure maple syrup plus additional for serving (optional)
- 1 tsp vanilla extract
- ¼ tsp cinnamon
- ½ ripe DOLE® Banana, peeled and finely chopped
- ½ cup DOLE® Pineapple, finely chopped
- 2 Tbsp chopped dry-roasted unsalted pistachios
Stir rice and 2 cups water in a medium saucepan; heat to a boil over medium-high. Reduce heat to medium-low; cover. Cook 35 minutes or until all water is absorbed. Stir in almond milk, maple syrup, vanilla and cinnamon; cover. Cook 30 minutes more or until mixture is thick and creamy, stirring frequently.
Stir banana, pineapple and pistachios in a small bowl.
Divide ½ cup banana mixture among 6 small bowls; top with rice mixture and remaining ½ cup banana mixture. Serve drizzled with additional maple syrup, if desired. Makes 6 servings.
