Fresh and Fruity Butter Board


  • 2 Tbsp oil
  • 2 garlic cloves, sliced
  • ¼ cup Oppy organic ginger, grated
  • 1 cup butter, softened
  • ¼ cup chopped nuts of choice
  • 1 tsp fresh oregano, chopped
  • 1 Ocean Spray mandarin orange, zested, peeled and sliced
  • ⅓ cup honey
  • Flaky sea salt
  • 1 Envy™ apple, cored and sliced
  • 1 JAZZ™ apple, cored and sliced
  • 1 Zespri SunGold kiwi, peeled and sliced
  • 1 Zespri green kiwi, peeled and sliced
  • 1 bunch Ocean Spray grapes
  • 1 Perpetual Vegetable Co. cucumber, sliced
  • 1 OriginO tomato-on-the-vine, sliced
  • 1 Eco Farms avocado, pitted, peeled and sliced
  • 1 Divemex bell pepper, cored and sliced
  • Bread slices or crackers (optional)

Place a skillet over medium heat; add oil. Once oil is hot, add garlic and ginger, and fry for 30 to 60 seconds. Stir; flip garlic slices and fry 30 seconds more. Remove garlic and ginger to paper towels.

Spread/swirl softened butter onto a large wooden serving board, leaving a 3-inch margin. Top butter with nuts, garlic-ginger mix and oregano. Add mandarin zest, drizzle with honey and sprinkle with sea salt.

Arrange prepared fruits and vegetables over the butter. Add bread slices or crackers if desired. Makes 8 to 10 servings.
