Chaffles (Cheesy Waffles)

  • 4 large eggs
  • 2 cups whole-milk mozzarella, shredded
  • 2 Tbsp coconut or almond flour
  • 1 tsp baking powder
  • Pinch of kosher salt
  • 1 Tbsp minced garlic
  • Melted butter or oil, for brushing
 

Preheat a waffle maker to setting 4 (medium-high). In a mixing bowl, thoroughly beat the eggs. Add the mozzarella, flour, baking powder and salt. Stir until thoroughly combined.

With the heated waffle maker in the horizontal position, brush the plates with melted butter or oil. Fill the bottom plate half to three-quarters full of batter and spread evenly on the plate with a silicone spatula. Close and rotate waffle maker to the vertical position (if necessary). When the waffle maker signals the cook time is done and the chaffle is dark golden brown, carefully remove. Repeat with the remaining batter. Makes 3 chaffles.

Tip: Garnish with syrup, fruit and basil.
