POM® Pomegranate Arils and Wonderful® Seedless Lemon Tart
THE WONDERFUL COMPANY
- 8 oz vanilla cookies, finely crushed
- 3 Tbsp sugar
- ⅓ cup coconut oil, melted
- 1½ cups sugar
- ¼ cup cornstarch
- 4 large eggs plus 4 yolks
- 1 cup juice from Wonderful® Seedless Lemons
- ½ cup plain yogurt
- 1 cup POM Wonderful® Pomegranate Arils
- Mint, for garnish
CRUST
FILLING
Heat oven to 375 F.
Prepare the crust: Blend cookie crumbs, sugar and coconut oil. Press about ½ cup crust mixture into each of 6 (4-inch) tart pans. Place pans on a baking sheet; bake 10 minutes until fragrant. Remove from oven; cool.
Prepare the filling: In a medium saucepan, combine sugar, cornstarch, eggs and yolks; whisk until smooth. Place pan over medium heat; whisk in lemon juice and yogurt. Whisking constantly, cook filling until it begins to bubble. Stir 30 seconds more, then remove from burner. Whisk 1 minute.
Spoon ½ cup filling into each crust. Place plastic wrap over each tart; chill 2 hours. Remove wrap, add POM Arils and garnish with mint. Makes 6 servings.
