Prosciutto Pear Cups
CMI ORCHARDS, DOMEX SUPERFRESH GROWERS, RAINIER FRUIT, STARR RANCH GROWERS, STEMILT GROWERS, USA PEARS
- 8 oz prosciutto
- 8 oz ricotta cheese
- 2 ripe USA Pears
- 6 to 8 basil leaves, cut into thin strips
Preheat oven to 375 F.
Cut prosciutto into 24 2½- to 3-inch squares. Press 1 square into each greased cup of a mini cupcake pan. Bake 15 minutes, until crisp. Remove from oven; let cool completely.
Spoon ricotta cheese into cooled cups. Thinly slice pears and arrange slices on the ricotta, along with the basil, then serve. Makes 24 servings.
