Campari® Shakshuka

tomato dish with eggs

    SPICY TOMATO SAUCE

  • 6 cups Campari® tomatoes, chopped
  • 4 Tbsp unsalted butter
  • 1 tsp hot smoked paprika
  • ½ tsp chili powder
  • 1 tsp kosher salt
  •  

    EGGS

  • 8 eggs
  • ½ cup queso fresco, crumbled
  • Kosher salt
  • Freshly ground black pepper
 

Prepare the tomato sauce: Heat the tomatoes in a large, deep skillet over medium heat. Once the tomatoes start to simmer, stir in the butter, paprika, chili powder and salt. Divide sauce into 4 portions.

Prepare the eggs: In a small cast-iron pan, bring 1 portion of prepared sauce to a simmer. Add two eggs to the pan, reduce to low heat and cover tightly with a lid until yolks are set to your preference, 5 to 7 minutes. Garnish with cheese and cilantro, and salt and pepper to taste. Repeat for remaining sauce and eggs. Makes 4 servings.

Tip: Serve hot with grilled crusty bread.
