Watermelon and Grape Salad with Grilled Lime Vinaigrette
Pacific Trellis Fruit, Dulcinea
Vinaigrette
- 2 limes, halved, and zest of ½ lime
- 1 garlic clove, minced
- 2 tsp cilantro, chopped
- 2 tsp mint, chopped
- ½ tsp sugar
- ¼ cup olive oil
- 4 cups Dulcinea® PureHeart® Mini Seedless Watermelon, rind removed, diced
- 2 cups Dulcinea® Seedless Grapes (red or green)
- 1½ cups cucumber, diced
- 1½ cups jicama, peeled and diced
- 8 mint leaves, torn
- Salt and pepper, to taste
Prepare the vinaigrette: Heat grill to high; place limes on grill, cut side down. Grill limes 3 to 5 minutes until nicely charred. Remove from grill and carefully juice. Combine lime juice, zest, garlic, cilantro, mint and sugar. Thoroughly whisk in olive oil.
Prepare the salad: In a large bowl, combine watermelon, grapes, cucumber, jicama and mint leaves. Drizzle vinaigrette over salad; gently toss. Season with salt and pepper, to taste. Serve chilled or at room temperature. Makes 4 to 6 servings.
