Fruit Skewers with Devonshire Dip

DEVONSHIRE DIP

  • 4 oz mascarpone cheese
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 2 Tbsp sugar
  • 1 tsp lemon juice
  • 10 (9-inch) double-prong wood skewers
  • 2 Cara Cara oranges, peeled, quartered, all white pith removed
  • 2 mandarin oranges, peeled, quartered, all white pith removed
  • 6 kiwis, peeled and quartered
  • 5 figs, cut in half lengthwise
  • 2 peaches, pitted, cut in 6 wedges per peach

Prepare the dip: Beat all dip ingredients together in a bowl until fluffy. Refrigerate while assembling the fruit skewers.

Build the skewers by alternating a piece of orange or mandarin, then kiwi, then fig, followed by a piece of orange or mandarin and ending with a peach wedge.

Keep the skewers chilled; serve with the Devonshire dip. Makes 10 skewers.

Note: It is important that the citrus and kiwis are cut in quarters to be secure on the double wood skewers.
