Protein greens

Make meaty mixed salads for your next meal

by Marcy Goldman

Everyone wants healthy salads, and social media has no shortage of food influencers tossing up chickpeas, tofu, grains and fiber-friendly pulses with the usual salad staples. But what about meat? Many people still want some heftier protein—such as seafood, chicken or beef—to bolster all that light fare.

Of course you can always add a chicken breast to your greens, but here are some fresh ideas for creating a satisfying salad:

  • Try Korean ribs over shredded cabbage and Sriracha-spiked cellophane noodles, all topped with kimchi.
  • Make a shish taouk salad with Middle Eastern marinated grilled chicken kebabs, couscous, hummus and greens.
  • For seafood lovers, grilled salmon, shrimp or crab meat is a natural addition to a Caesar salad.

The ways to add muscle-building protein to your salads are limited only by your imagination. For a little more inspiration, try one of the recipes on these two pages.
