Campari® Tomato Thyme Jam


  • 2 lbs Campari® Tomatoes, coarsely chopped
  • ⅔ cup light brown sugar
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp freshly grated ginger
  • 1 tsp fresh thyme, chopped
  • 1 tsp kosher salt

In a heavy-bottomed saucepan, add all ingredients. Bring the mixture to a boil over medium heat, stirring frequently to prevent burning.

Reduce heat to low. Simmer, stirring occasionally, until the mixture thickens to a jam consistency, about 60 to 75 minutes. Remove from heat; allow to cool to room temperature.

Transfer to an airtight container. Store, refrigerated, for up to 10 days.

Makes 8 to 12 servings, about 1 to 2 cups.
