Basic Stir-fry Marinade For Any Meat

- 1 lb meat (beef, lamb, lean cuts of chicken breast or pork loin)
- 1⁄2 tsp kosher salt
- 1 tsp light soy sauce or shoyu
- 1 tsp Shaoxing wine or dry sherry
- 1⁄2 tsp sugar
- 1⁄2 tsp cornstarch
- Small pinch of freshly ground white pepper (optional)
- Small pinch of MSG (optional)
- 1⁄2 tsp baking soda (optional)
- 1 tsp peanut, rice bran or other neutral oil
Place the meat in a medium bowl, cover with cold water and vigorously agitate it. Drain through a fine-mesh strainer set in the sink and press on the meat with your hands to remove excess water, then return it to the bowl. Add the remaining marinade ingredients and stir vigorously with your fingertips or chopsticks for 30 seconds. Set aside at room temperature for 15 to 30 minutes or in the fridge up to overnight before stir-frying.
