Garlic-Lemon Zest Grilled Shrimp

MARINADE

  • ½ cup extra-virgin olive oil
  • 2 Tbsp flat leaf Italian parsley, chopped
  • 1 tsp grated lemon zest
  • 1 tsp garlic, minced
  • 1 lb Xcellent U15 EZ peel raw shrimp, thawed and peeled
  • Metal or wooden skewers, as needed
  • Salt and pepper to taste

Prepare the marinade: In a small bowl, combine all marinade ingredients.

Place peeled shrimp in a large bowl. Pour marinade over shrimp; toss to coat. Refrigerate for 1 hour. (If using wooden skewers, soak them in water while shrimp marinates.)

Preheat grill to 500 F. Place shrimp on skewers, then grill for 2 minutes per side until opaque or internal temperature reaches 145 F. Salt and pepper to taste.

Makes 4 servings.
