Garlic-Lemon Zest Grilled Shrimp
CHICKEN OF THE SEA FROZEN FOODS
MARINADE
- ½ cup extra-virgin olive oil
- 2 Tbsp flat leaf Italian parsley, chopped
- 1 tsp grated lemon zest
- 1 tsp garlic, minced
- 1 lb Xcellent U15 EZ peel raw shrimp, thawed and peeled
- Metal or wooden skewers, as needed
- Salt and pepper to taste
Prepare the marinade: In a small bowl, combine all marinade ingredients.
Place peeled shrimp in a large bowl. Pour marinade over shrimp; toss to coat. Refrigerate for 1 hour. (If using wooden skewers, soak them in water while shrimp marinates.)
Preheat grill to 500 F. Place shrimp on skewers, then grill for 2 minutes per side until opaque or internal temperature reaches 145 F. Salt and pepper to taste.
